TURKEY ORZO SOUP

Turkey Orzo Soup is the best way to use leftover turkey! This healthy and filling soup is packed full of flavor and comes together in just minutes!

Ingredient 

–– 1 tablespoon olive oil – 1 onion, chopped – 2 carrots, diced – 2 celery stalks, diced – 2 cloves garlic, minced – 1 teaspoon dried thyme – 1 teaspoon dried oregano – 1/2 teaspoon dried rosemary – Salt and pepper to taste – 6 cups turkey or chicken broth – 1 cup cooked turkey meat, shredded or diced – 1/2 cup uncooked orzo pasta – 1 cup spinach leaves, chopped – Juice of 1 lemon – Fresh parsley, chopped, for garnish (optional)

Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.

Add the minced garlic, dried thyme, oregano, rosemary, salt, and pepper to the pot. Cook for another minute until the garlic is fragrant.

Pour in the turkey or chicken broth and bring the mixture to a boil.

Remove from heat and carefully add bourbon. Slowly pour the hot maple bourbon mixture down the bowl while the mixer is on medium-high speed. Continue whisking the eggs.

Stir in the chopped spinach and lemon juice. Cook for an additional 2-3 minutes until the spinach is wilted.

 Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.

Serve hot, garnished with chopped fresh parsley if desired.
