SUGO RECIPE

Sugo is the Italian word for "sauce" and is a tomato-based sauce recipe used for topping pasta. This sugo di pomodoro recipe is the authentic version of this classic Italian dish. Made with just a few ingredients!

Ingredient 

– 2 tablespoons olive oil – 1 onion, finely chopped – 2 cloves garlic, minced – 1 carrot, grated – 1 celery stalk, finely chopped – 1 can (28 ounces) crushed tomatoe – 1 teaspoon dried oregano – 1 teaspoon dried basil – Salt and pepper to taste – Optional: Red pepper flakes for added spice – Fresh basil leaves, chopped (for garnish) – Grated Parmesan cheese (for serving)

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for another minute, until fragrant.

Add the grated carrot and chopped celery to the pan, and cook for 5-7 minutes until softened.

Pour in the crushed tomatoes and stir well to combine.

Add the dried oregano, dried basil, salt, pepper, and red pepper flakes (if using). Stir to incorporate the spices into the sauce.

Bring the sauce to a simmer, then reduce the heat to low. Let it simmer gently for about 30 minutes, stirring occasionally, to allow the flavors to meld together and the sauce to thicken.

 Taste the sauce and adjust seasoning if necessary. Once the sauce has reached your desired consistency and flavor, remove it from the heat.
