SAUSAGE KALE BEAN SOUP

Italian Sausage Kale Bean Soup is a healthy and hearty recipe full of flavor that's easy to make. Using Italian sausage, kale, and cannellini beans, this recipe is a great starter or perfect lunch dish.

Ingredient 

– 1 lb Italian sausage, casings removed – 1 onion, chopped – 3 cloves garlic, minced – 4 cups chicken or vegetable broth – 2 cups water – 2 cans (15 oz each) cannellini beans, drained and rinsed – 1 can (14.5 oz) diced tomatoe – 1 teaspoon dried thyme – 1 teaspoon dried oregano – Salt and pepper to taste – 4 cups chopped kale leaves, stems removed – Grated Parmesan cheese, for serving (optional)

In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.

In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes.

Return the cooked sausage to the pot. Add the chicken or vegetable broth, water, cannellini beans, diced tomatoes, dried thyme, dried oregano, salt, and pepper. Stir to combine.

Bring the soup to a simmer and let it cook for about 15-20 minutes to allow the flavors to meld together.

Add the chopped kale leaves to the soup and cook for an additional 5 minutes, until the kale is tender.

Taste and adjust seasoning with more salt and pepper if needed.
