PUMPKIN RICOTTA COOKIES

Pumpkin Ricotta Cookies are a delicious soft Italian cookie with a cake-like texture and pumpkin spice glaze. Perfect holiday cookie recipe!

Ingredient 

– 1 cup canned pumpkin puree – 1 cup ricotta cheese – 1/2 cup unsalted butter, softened – 1 cup granulated sugar – 1 egg – 1 teaspoon vanilla extract – 2 cups all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 teaspoon ground cinnamon – 1/2 teaspoon ground nutmeg – 1/4 teaspoon ground clove – 1/2 cup chopped nuts (optional) – Powdered sugar for dusting (optional)

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.

 Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. If desired, fold in the chopped nuts until evenly distributed throughout the dough.
