PIGNOLI COOKIES (ITALIAN PINE NUT COOKIES)
Authentic Italian Pignoli Cookies are just like nonna used to make! These chewy and sweet Italian pine nut cookies take just minutes to put together!
– 2 cups almond paste
– 1 cup granulated sugar
– 2 large egg white
– 1 cup pine nut
– Powdered sugar, for dusting (optional)
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or silicone baking mat.
In a large bowl, break up the almond paste into small pieces. Add the granulated sugar and mix together until well combined.
In a separate bowl, beat the egg whites until they form stiff peaks.
Gently fold the beaten egg whites into the almond paste mixture until fully incorporated. Be careful not to overmix.
Place the pine nuts in a shallow dish. Take about a tablespoon of the almond paste mixture and roll it into a ball between your palms. Roll the ball in the pine nuts, coating it evenly.
Place the coated ball onto the prepared baking sheet and gently flatten it with your fingers. Repeat with the remaining almond paste mixture and pine nuts, spacing the cookies about 1 inch apart.
Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
