PASTA E CECI | AUTHENTIC ITALIAN RECIPE WITH CHICKPEAS

Pasta e Ceci is a classic Italian recipe made with small pasta shells and chickpeas. This traditional dish is flavored with rosemary and takes just 30 minutes to put together!

Ingredient 

– 1 cup dried chickpeas, soaked overnight (or use canned chickpeas, drained and rinsed) – 1 onion, finely chopped – 2 cloves garlic, minced – 2 tablespoons olive oil – 1 can (14 oz) diced tomatoe – 4 cups vegetable broth or water – 1 teaspoon dried oregano – 1 teaspoon dried basil – 1/2 teaspoon dried thyme – Salt and black pepper to taste – 8 oz short pasta (such as ditalini, small shells, or elbow macaroni) – Grated Parmesan cheese for serving (optional) – Chopped fresh parsley for garnish (optional)

If using dried chickpeas, drain and rinse them after soaking overnight. If using canned chickpeas, drain and rinse them as well.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the diced tomatoes (with their juices) to the pot, along with the soaked or canned chickpeas, vegetable broth or water, dried oregano, dried basil, dried thyme, salt, and black pepper. Stir well to combine.

Bring the mixture to a simmer, then reduce the heat to low and let it cook, partially covered, for about 30 minutes to allow the flavors to meld together and the chickpeas to soften.

After 30 minutes, taste the soup and adjust the seasoning if needed. If the soup looks too thick, you can add more vegetable broth or water to reach your desired consistency.

Increase the heat to bring the soup to a gentle boil, then add the pasta to the pot. Cook according to the package instructions for the pasta you're using, stirring occasionally to prevent sticking.

Once the pasta is cooked al dente, remove the pot from the heat. Serve the Pasta e Ceci hot, garnished with grated Parmesan cheese and chopped fresh parsley if desired.
