Orange Layer Cake Recipe

The orange flavor explodes in this cake. The cake, buttercream, and center layer of white chocolate orange ganache have zest and fresh juice. 

Orange Buttercream – 1 cup unsalted butter, softened 226g – zest of 1 orange – 1 tsp fine sea salt – 1 vanilla bean – 3 cups powdered sugar organic is preferable – 3-4 tablespoons freshly squeezed orange juice Orange Cake – 1 cup unsalted butter, softened 226g – zest of 2 orange – 2 cups granulated sugar 440g – 4 large eggs at room temperature – 1 tsp fine sea salt – 2 teaspoons pure vanilla extract – 3 cups cake flour 375g – 1/2 tsps baking powder – 1/2 tsps baking soda – 1/2 cup fresh orange juice 125g – 3/4 cups buttermilk, at room temperature 185g Orange Ganache – 250g white chocolate, chopped – 60g fresh orange juice

INSTRUCTION

Set mixer to mix butter, vanilla, salt, and orange zest. Sugar powder. One tablespoon of orange juice smooths buttercream. More/less? Make and store this airtight at room temperature.

STEP  1 .

Heat the oven to 325 F. Butter and flour two 8-inch cake pans. Put the butter in a stand mixer with the paddle attachment, zest the orange over it, and turn it on.

STEP 2.

Add sugar and beat for 5 minutes until creamy and light. Add salt and vanilla and mix. Add eggs one at a time, mixing almost completely before adding another.

STEP 3.

Scrape the bowl bottom with a rubber spatula to mix everything. Combine cake flour, baking soda, and powder, then gently fold with a rubber spatula.

STEP 4.

Put buttermilk and orange juice slowly. Combine. Two cake pans should bake batter for 30–40 minutes until a cake tester comes out clean or the top bounces back.

STEP 5.

Transfer pan to rack. Gently slice cakes with serrated bread knives. Fully chill. Stir white chocolate every 30 seconds in the microwave. Once mostly melted, stir until glossy. Add orange juice and mix.

STEP 6.

A cake layer with ganache and buttercream ring face-up. One layer. Refrigerate 10 minutes to set ganache. Cover the second cake layer with remaining buttercream face-down.
