ITALIAN TUNA PASTA SALAD

Italian Tuna Pasta Salad is full of fresh and zesty flavors and comes together in just minutes!

Ingredient 

– 8 ounces (about 225g) of pasta (such as fusilli, penne, or rotini) – 1 can (5 ounces/140g) of tuna, drained – 1/2 cup cherry tomatoes, halved – 1/4 cup black olives, sliced – 1/4 cup red onion, finely chopped – 1/4 cup fresh parsley, chopped – 1/4 cup cucumber, diced – 1/4 cup bell pepper (any color), diced – 1/4 cup grated Parmesan cheese – Salt and pepper to taste For the dressing: – 1/4 cup extra virgin olive oil – 2 tablespoons lemon juice – 1 clove garlic, minced – 1 teaspoon Dijon mustard – 1/2 teaspoon dried oregano – Salt and pepper to taste

Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool completely.

In a large mixing bowl, combine the cooked and cooled pasta, drained tuna, cherry tomatoes, black olives, red onion, parsley, cucumber, bell pepper, and grated Parmesan cheese.

In a small bowl, whisk together the ingredients for the dressing: olive oil, lemon juice, minced garlic, Dijon mustard, dried oregano, salt, and pepper.

Pour the dressing over the pasta salad and toss until everything is evenly coated

After adding all the maple bourbon mixture, whisk on high speed until ribbons form, roughly 3-5 minutes. Turn off mixer when ribbons appear. To remove air bubbles, tap the bowl on the counter several times.

Taste and adjust seasoning with salt and pepper if needed.

Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
