Italian Soffritto Recipe

Recipe for Italian Soffritto. A basic soffritto recipe is used in most Italian sauces, soups, and stews. This flavorful base gives any recipe its essential flavours. Italian soffritto preparation tips are here! 


– 1-2 tablespoons extra virgin olive oil – 1 medium-sized onion, peeled and diced (about 1 cup) – 1 medium-sized carrot, peeled and diced (about ½ cup) – 1 celery rib, diced (about ½ cup)


Clean, peel, and prepare vegetables. Slice the onion, carrot, and celery thinly with a sharp knife. Chop, dice, finely dice, or use your preferred method to cut vegetables into small pieces.

Perfectionism is unnecessary! Short cut: Use a food processor's pulse mode to finely chop the Italian soffritto mix to speed up the process. On medium heat, add extra virgin olive oil to the pan or pot.

When the oil shimmers, add the diced vegetables and stir often. Add meat now. Adjust to medium-low heat and sauté until golden, 5-7–20 minutes.

Variations in notes list optional add-ins. Garlic, herbs, spices, and wine can be added to the soffritto in the last 2-3 minutes. Stir well and cook for 1–2 minutes. Then, add the remaining ingredients per the recipe.
