ITALIAN SAUSAGE AND LENTILS

Italian Sausage and Lentils is a hearty and rustic recipe that comes together quickly. Simple yet elegant, this Italian recipe is a great one-pot meal that will fill you up without weighing you down.

Ingredient 

– 1 lb Italian sausage, casings removed – 1 cup dried lentils, rinsed and drained – 1 onion, diced – 2 cloves garlic, minced – 4 cups chicken broth – 1 can (14.5 oz) diced tomatoe – 1 teaspoon dried oregano – Salt and pepper to taste – Fresh parsley, chopped (for garnish)

In a large pot, brown Italian sausage over medium heat, breaking it into crumbles.

Add diced onion and minced garlic, cook until softened.

Stir in dried lentils, chicken broth, diced tomatoes, dried oregano, salt, and pepper.
