ITALIAN ROASTED VEGETABLES

Italian Roasted Vegetables is a delicious blend of oven roasted veggies topped with olive oil and Italian spices. This recipe is the best way to eat your vegetables!

Ingredient 

– 2 bell peppers (red, yellow, or orange), sliced – 1 large zucchini, sliced – 1 large yellow squash, sliced – 1 red onion, sliced – 2-3 cloves garlic, minced – 2 tablespoons olive oil – 1 teaspoon dried Italian herbs (basil, oregano, thyme) – Salt and pepper to taste – Optional: cherry tomatoes, halved – Grated Parmesan cheese for serving (optional)

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the sliced bell peppers, zucchini, yellow squash, red onion, minced garlic, olive oil, dried Italian herbs, salt, and pepper.

Toss well to coat the vegetables evenly with the oil and seasonings.

Spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper or aluminum foil.

If using, scatter the halved cherry tomatoes over the vegetables.

Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through the cooking time for even roasting.

Once done, remove the baking sheet from the oven and let the roasted vegetables cool slightly.

Serve the Italian roasted vegetables hot, garnished with grated Parmesan cheese if desired.
