ITALIAN ALMOND RICOTTA COOKIES

Italian Almond Ricotta Cookies are easy to make and perfect for every occasion. Made with ricotta cheese, almond extract, and topped with a delicious glaze, this is sure to be your new favorite Italian cookie recipe.

Ingredient 

– 1 cup almond flour – 1 cup ricotta cheese – 1/2 cup granulated sugar – 1/4 cup unsalted butter, softened – 1 teaspoon almond extract – 1 teaspoon vanilla extract – 1 teaspoon baking powder – Pinch of salt – Sliced almonds for topping (optional) – Powdered sugar for dusting (optional)

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, cream together the ricotta cheese, softened butter, and granulated sugar until smooth.

Add almond flour, almond extract, vanilla extract, baking powder, and salt to the mixture. Mix until well combined.

Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
