Fregola Sarda Pasta Recipe with Zucchini and Cheese

Ingredient

– 500 grams Fregola Sarda Pasta or this Fregola Sarda Pasta – 5 medium zucchini, diced – 1 yellow onion, chopped – 2 cloves garlic, minced – 1 ½ cups pecorino cheese or parmigiano cheese, freshly grated – 10 slices provolone cheese mozzarella cheese – 2 tablespoons Extra Virgin Olive Oil – Salt and Pepper to taste – 6 basil leaves, torn into piece

Direction

In a large oven-safe skillet or casserole dish, heat olive oil on medium. Add minced garlic and chopped onions. Cook until onions are translucent, a few minutes.

Step 1

Continue cooking the diced zucchini and garlic in the skillet for 4-5 minutes to soften. Add basil and remove from heat. Add salt and pepper to taste.

Cook Fregola Sarda pasta until "al dente" in a large pot of boiling salted water according to the package. This should take 8-10 minutes. Drain the pasta and set aside ½ cup of the water.

The zucchini and onion pan needs pasta water and cooked fregola pasta. Mix well. Place half the fregola and zucchini in the baking dish. Sprinkle half the pecorino and half the sliced cheese over the first layer. 

Step 4

Do it again with the rest of the fregola and reaming cheeses.  Bake for 15 to 20 minutes, or until the cheese melts and the bread turns golden brown. Hot food! Have fun.
