Crispy Baked Polenta Fries Recipe 

Crispy Baked Polenta Fries (Parmesan Herb) will make your heart skip a beat with their crispy exterior and creamy interior. Each bite is delicious, seasoned with herbs and covered in Parmesan cheese. 

Ingredient

– 16 oz. (1 lb.) quick cooking polenta (if using coarse ground, adjust liquid) – 6 cups boiling water (or chicken stock) – 1 teaspoon kosher salt – Fresh ground black pepper to taste – 2 tablespoons butter – ½ cup grated Parmigiano-Reggiano cheese, more for serving – ½ cup heavy cream or whole milk – ½ teaspoon dried oregano – ½ teaspoon dried thyme – ½ teaspoon dried rosemary – Olive oil for brushing

Direction

Add 1 tsp. sea salt to 6 cups of boiling water in a medium-large pot. Add 16 oz. of quick-cooking yellow corn polenta to boiling water and stir vigorously to avoid lumps.

Step 1

The polenta mixture should thicken after 5 minutes of stirring on medium-high heat. Reduce the heat to low and stir for another minute or two to make the polenta creamy.

After removing the pot from heat, add 2 tablespoons butter, ½ cup grated Parmigiano-Reggiano cheese, ½ cup heavy cream or whole milk, and herbs. Stir until all ingredients are combined and the polenta is creamy.

Place the creamy polenta on a greased or parchment-lined baking sheet or glass dish. Apply polenta evenly on the baking sheet, forming a ½-inch (1.25 cm) layer. Wrap the polenta in plastic and refrigerate for 2 hours or overnight.

Start with a 425-degree oven.  Cut the polenta into fries after it sets. Use a spatula to place the fries on the parchment-lined baking sheet. Give polenta fries lots of olive oil. Make sure both sides are coated. This makes crispy baked polenta fries. 

Step 5

Spread polenta fries in a single layer on a parchment-lined baking sheet. The fries should be golden brown and crispy after 25–30 minutes in the preheated oven. Sprinkle coarse salt and extra grated parmigiano over baked polenta fries. 

Step 6

Add more fresh herbs if desired. Warm serve.  Serving: Serve baked polenta fries with aioli, spicy ketchup, or homemade marinara sauce (see blog post for more dipping sauce recipes). Enjoy them as a tasty snack or side dish.
