Blueberry Cranberry Meringue Pie Recipe

Butter Pie Crust – 1 ½ cups all purpose flour – 1 teaspoon fine sea salt – 1 tablespoon granulated sugar – ¾ cups butter cold and sliced – 5 tablespoons water cold Blueberry Cranberry Curd – 6 oz fresh cranberrie – 1 cup blueberries fresh or frozen get juicy ones! – ¼ cup freshly squeezed lime juice – 1 cup granulated sugar – 2 large eggs plus 2 large yolk – ½ cup butter Blueberry Cranberry Meringue – 1 cup granulated sugar – ½ cup pure cranberry juice 100% cranberry – 4 large egg white – 2 tablespoons blueberry powder from ground freeze dried blueberrie – 1 teaspoon pure vanilla extract

Mix flour, sugar, and salt for pie crust. Bakers slice kidney beans for butter. After spatula-stirring water, hand-forming dough into a ball requires many turns.

STEP  1 .

Refrigerate plastic-wrapped 2–48 hours. Pre-bake pie crust: On a lightly floured surface, roll the chilled crust 3 inches wider than your rimmed pie pan. Trim pan edges after placing.

STEP 2.

Scrimp and fold dough edges. Refrigerate one hour to harden. Place pie on cookie sheet in 400 F oven in case pastry or butter leaks. A foil-crimped pie. Add dried beans or pie weights to the rim.

STEP 3.

Remove foil and weights after 25 minutes. For 10 minutes, cook cranberries, blueberries, and lime juice in a pot until the berries pop and the liquid is curd.

STEP 4.

The immersion blender mashed berries. ultra-fine sieve. Adding clean berries to sugar pot. Sugar dissolves when cooked. Berry-egg bowl. Slowly add more mixture. Mix berries and eggs.

STEP 5.

Eggs tempered. Stir to make thick. An overcoat. Adding cold butter. Before baking, strain curd into par-baked crust through fine mesh sieve. To set, bake pie 15 minutes at 350.

STEP 6.

After pie chills for hours, make meringue. Blend egg whites for baked meringue in stand mixer. Heat cranberry juice and sugar moderately. Put pot candy thermometer.

STEP 7.

At 250 F, cook until “the candy stage”. Slowly whisk egg whites while liquid cools for a minute or two, then add with a low mixer.

STEP 8.

Remove whisk and mix meringue ingredients on medium speed for 5-10 minutes until stiff. Blueberry-vanilla powder glaze. Meringue/pipe pie. All-day cool meringue. Torch pie before serving.
