Baklava Cheesecake Recipe

Creamy cheesecake with vanilla beans, lemon juice, and baklava crust. Phyllo and nuts contrast beautifully with creamy cheesecake. The pie is drenched in a simple syrup to taste like baklava.  

Baklava Crust – 20 phyllo sheets 227g – 226 g ghee or melted butter – 1 cup pistachios finely chopped or ground – 1 cup pecans finely chopped or ground – ¼ cup sugar brown or granulated – 1 teaspoon ground cinnamon Cheesecake Filling – 452 g cream cheese two brick – 1 cup granulated sugar 200g – ½ teaspoon fine sea salt – 2 teaspoons pure vanilla extract – ½ cup sour cream or labneh 120g – 2 teaspoons freshly squeezed lemon plus the zest of a lemon, if desired – two large eggs at room temperature Honey Syrup – ½ cup sugar 100g – ¼ cup water 60g – ¼ cup honey 85g – a few drops of fresh lemon juice optional

To fill, use room-temperature eggs, sour cream, and cream cheese. Chop nuts finely. Pour sugar, cinnamon, and ground nuts into a bowl. First, fill.

STEP  1 .

In a bowl, mix sugar, vanilla, and cream cheese. Sour cream, lemon juice, and zest should be smooth. Beat eggs briefly. Sieve filling into a bowl to remove lumps.

Crust-making: Moisten thick ghee for microwave phyllo brushing. Parchment-lined 9- or 10-inch round springform pan buckle. Fold over first ten phyllo sheets on pan bottom. Apply ghee,

then place the second sheet so it covers the bottom but only partially covers the top—it'll be slightly askew and cover the first sheet halfway. Cover pan with 10 bottom sheets clockwise.

STEP 4.

Brush ghee and sprinkle half the nuts after 10 layers. Phyllo sheets and four more on top of the nuts (ghee-brushed and layered askew to cover the pan). Use 5 more sheets and remaining nut mixture.

Extract phyllo cheesecake. Ignore phyllo edge overhang. For 60–70 minutes, sheet-bake the cheesecake at 325 F to prevent ghee seepage. In a small pot on medium, heat water, sugar,
