Authentic Struffoli Recipe

Italian Honey Balls (Struffoli) are tiny fried dough balls covered in citrus-scented honey syrup and sprinkled with colour. Make the best Italian struffoli with this photo guide. 

Ingredient

– 2 cups of “00” flour, or all-purpose flour – 3 large egg – 2 tablespoons unsalted butter, cut into ½ inch pieces and softened to room temperature – 2 tablespoons of granulated sugar – 1 teaspoon vanilla extract – 2 tablespoons of liquor (grappa, orange liquor, rum, brandy, white wine, or limoncello) – 2 tablespoons orange zest (or lemon zest) – ¼ teaspoon of baking powder – ¼ teaspoon of salt – 3 cups Sunflower oil or vegetable oil, for frying Honey Glaze – ¾ cup of Wildflower or Acacia honey – 2 tablespoons freshly squeezed orange juice (or 1 tablespoon of lemon juice)

Direction

In a food processor (see notes for hand making), pulse eggs and sugar until creamy and pale yellow, about 2 minutes. Wait for the sugar and eggs to cream. Mix orange zest, liquor and vanilla extract.

Step 1

Add flour and baking powder and pulse a few times. Add butter and pulse until combined. Sticky dough. Refrigerate the dough for 30–45 minutes wrapped in plastic.

Step 2

Place chilled dough on a lightly floured surface. Divide dough evenly into four parts. Roll each section into a finger-thick rope. Section each dough rope into ½ to 1-inch wide pieces. Tip: I like my marbles slightly larger

Step 3

Roll each section into hazelnut or marble-sized balls in your palms—they will puff up when fried! Roll out the balls on a parchment-lined baking sheet covered with a clean kitchen towel. 

Step 4

Line a large plate or baking sheet with paper towels. By the stove. Oil a heavy-bottomed pot over medium-high heat. Heat oil to 350°F for frying. . Check one dough ball for bubbles and a quick golden brown colour. 

Step 5

Fried dough balls in hot oil (15 per batch). Stir for 2 minutes until puffed and golden brown. Use a slotted spoon to move dough balls in oil for an even golden brown. 

Step 6

With a slotted spoon, remove the dough balls, carefully shake the excess oil back into the pan, and transfer the fried dough to a paper towel to absorb the oil. Refry remaining dough.

Step 7

Medium-heat honey and orange juice in a small saucepan. Mix well. Stir honey with a wooden spoon for 5 minutes until runny. Put the fried dough balls in a big bowl. Toss the struffoli in the honey mixture until fully coated.
