ASPARAGUS RICOTTA FRITTATA

Asparagus Ricotta Frittata is a simple and delicious recipe that's made with fresh asparagus, shallots, ricotta cheese, eggs, and mozzarella. This classic Italian egg dish is simple to make and perfect for any occasion.

– 8 asparagus spears, trimmed and chopped – 6 large egg – 1/2 cup ricotta cheese – 1/4 cup grated Parmesan cheese – Salt and pepper to taste

Preheat your oven to 375°F (190°C) and lightly grease a 9-inch oven-safe skillet.

In a bowl, whisk together eggs, ricotta, Parmesan, salt, and pepper until well combined.
