– 8 ounces of spaghetti or pasta of your choice– 2 tablespoons of olive oil– 3 cloves of garlic, minced– 1/4 cup of anchovy fillets, chopped– 1/4 cup of breadcrumb– Salt and pepper to taste– Red pepper flakes (optional)– Chopped parsley for garnish
Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped anchovy fillets, cook until anchovies dissolve into the oil.
Stir in breadcrumbs and cook until golden brown and crispy.
Add cooked pasta to the skillet along with a splash of reserved pasta water. Toss until the pasta is well coated with the anchovy breadcrumb mixture, adding more pasta water if needed.
